In January good and healthy seasonal food can lift up every mood, especially during these cold and grey endless winter days.
Here is a simple recipe, full of flavors and energy.
Pears are easy to find and dried fruits may be in your cupboards as a healthy and natural snack.
Cardamom is good for the digestion and has anti-inflammatory virtues, star anise is antibacterial and cinnamon is an immune system booster!
Add to their benefits, these spices’ flavor combine in a very comforting way.
Ingredients (For 6 persons:):
-1 handfull of dried figs, 2 handfull of raisins, 1 handfuls of dried apricots
-1 table spoon of cardamom
-2 sticks of cinnamon
-1 table spoon of star anise
-2 table spoons of sugar
-1 liter of water or earl grey tea
-Optional 1/4 liter of white wine
Cut the pears in 4 parts, place them in a big cast iron cocotte or any saucepan.
Add the dried fruits, the sugar, the spices and the water or tea (and white wine if you want).
Let cook at medium heat for 45 minutes until the fruits are very soft.
You can serve lukewarm with one of the cakes recipes that we already shared on the journal.
Slowly cooked this winter fruit soup will fill the kitchen and the home with a delicious smell.
Bon appétit !
