Cooking with Kids - Madeleines & Quatre-Quarts

While we are all at home for the coming weeks, why not taking advantage of this unexpected extra time with our kids to bake with them?

I would love to share with you two easy and yummy recipes the girls love and that make great afternoon snacks.

Orange Blossom Butter Madeleines

 

Ingredients

-3 table spoons of orange blossom water. You can also choose to add nothing if you prefer regular butter madeleines

-160 g sugar

-175 g flour

-10 g baking powder

-180 g butter

-4 eggs

-35 g honey (acacia or flowers)

Ideally, you would want to prepare the dough 12h in advance but in real life, we are always doing it 10 mn before baking them and it's still yummy:)!

In a large bowl, mix the flour and the baking powder while you melt the butter in a small pan (low heat). Whip the eggs, sugar, orange blossom water and honey until you make the mix "foam". Then, add the flour/baking powder mix. Add the butter at the end. 

Store in the fridge in a well sealed container for 12 hours (or not!:))

When you are ready to bake, pre-heat your oven at 200° C.

Fill madeleine molds at 3/4 of their capacity. The best are the silicone's ones.

Place in the oven for 8-10 mns. First, the madeleines will rise and then become brown. It's time to get them out of the oven.

Quatre-Quarts
Ingredients

-250 g flour

-250 g sugar

-250 g butter

- 4 eggs

- 10 g baking powder

Preheat your oven to 200 ° C. 

Then, separate the whites from the yolks and whisk the whites. Put aside in a large bowl.

Melt the butter in a small pan (low heat), transfer in a bowl and add the sugar and the yolks and mix. Add the flour and baking powder and mix. Pour this mixture on the whites and blend delicately.

Pour in a buttered cake mold and bake during 30-40 mn. It's ready when after sticking the blade of a knife into the cake it's dry.
